A beautiful luminescence in the glass, with golden green reflections. The olfactory range shows that this Moraiolo in purity was harvested at veraison and immediately taken to the mill to be pressed and processed. You instantly recognize some fresh and aromatic vegetable notes, with prevailing scents of rosemary and fer. Particularly bitter to the palate, but this oil is still young and persistent.
In the final part of the gustatory analysis, you can perceive notes of sweet spice including cinnamon and nutmeg. A beautiful oil, which deserves to be combined with traditional local dishes including pasta alla norcina, and used instead of butter to prepare a Rocciata, a sort of strudel filled with walnuts, figs, apples, and raisins. Yhis oil will ensure its fragrance and lightness.
