SIDORO The agricultural company was founded by Alessandro Continelli, who continues his family's three-generation olive growing tradition, carried out with passion and dedication, taking care of over 2500 olive trees owned by the family.

Our family's mission is to care for the olive groves with the experience passed down from our parents and to produce healthy and genuine oil, in line with the culture and tradition of the best cold-extracted oil.

Located in the hills of Torre del Colle, a small hamlet in the municipality of Bevagna, in the green heart of Umbria and positioned above 400 meters above sea level, it is the ideal territory for growing olives according to tradition.

Respect for and protection of the territory, the reduction of pollution, good food, and the need to guarantee natural and high-quality products were the fundamental reasons for embracing organic farming practices. Today, many operations in the production process are still carried out by hand with the utmost attention to preserve the quality of our EVO oil and to maintain the unchanged landscape characterized by ancient trees.

Our Extra Virgin Olive Oil, among the best in Central Italy, is the result of constant work to obtain an oil of excellent quality from the Moraiolo, Frantoio, Leccino, and Favolosa (FS-17) cultivars. SIDORO, a Slow Food presidium for Secular Olive Trees, is published in the guide "Secular Olive Trees of the Province of Perugia" for its fantastic examples of Moraiolo: a typical variety of Central Italy.

ITALIAN EXTRA VIRGIN OLIVE OIL

SENSORY PROFILE

The predominance of the Moraiolo cultivar, together with Leccino, Frantoio and Pendolino varieties, contribute to a blend of intense flavor, characterized by medium to high fruity notes. It has a pleasant bouquet of almond with hints of wild grass, artichoke and chicory. The taste is a balanced blend of bitter and peppery flavors with very pleasant aromatic notes.

Used to enrich creamy soups, vegetable soups and mixed green salads and to enhance the flavor of both meat and fish dishes.

ITALIAN EXTRA VIRGIN OLIVE OIL MONOCULTIVAR MORAIOLO

SENSORY PROFILE

Mono-varietal oil from the exquisite cultivar characterized by a full-bodied flavor with an aroma that is fresh and green with intense bitter and peppery notes. To the nose, the medium intensity of the grassy aroma presents hints of artichoke and a slight sensation of almond.

FOOD PAIRINGS

Primarily intended to be used as a condiment on bruschetta, soups and red meats; capable of satisfying even the most refined and demanding palates.

SENSORY PROFILE

Medium fruity aroma, fresh and green to the nose with herbaceous undertones. The mouthfeel is delicate and enveloping and recalls the original bouquet. Well-balanced flavor characterized by a distinct yet refined pepperiness which is pleasantly persistent.

FOOD PAIRINGS

Recommended to lend dishes personality without overpowering the flavors and is suitable for white meats, grilled fish, rich salads and steamed or grilled vegetables.
